Creamy Penne With Spinach and Corn (VIDEO)

Boiled penne tossed in creamy cheesy sauce with shredded spinach and corn kernels.

CREAMY PENNE WITH SPINACH AND CORN – (Serves – 4)

Ingredients

3 cups boiled penne pasta
5-6 spinach leaves, shredded
¼ cup boiled corn kernels
2 tablespoons butter
1 tablespoon chopped garlic
1 teaspoon red chilli flakes
2 tablespoons refined flour
2 cups milk
Salt to taste
2 tablespoons grated parmesan cheese + for garnishing


Method

1. Heat butter in a non-stick pan. Add garlic and sauté for 30 seconds. Add chilli flakes and sauté for 30 seconds.
2. Add corn kernels and mix. Add flour, mix and cook for 30 seconds. Add milk, whisk and cook till mixture thickens.
3. Add pasta and mix. Add spinach leaves, mix and cook for 1 minute. Switch off heat, add salt and parmesan cheese and mix well.
4. Serve hot garnished with some parmesan cheese.
