Spaghetti with Vegetable Balls –

Ingredients for vegetable balls –
2 big sized boiled and mashed potatoes
2 tblsps finely chopped onion
2 tblsps finely chopped carrot
2 tblsps finely chopped capsicum
1/2 tsp garlic paste
1/2 tsp ginger paste
1 tsp salt
1/2 tsp black pepper powder
1/2 tsp Italian seasoning or oregano
1/2 tsp chilly flakes
2 tblsps grated processed cheese
3 tblsps dry bread crumbs
(Mix all the above ingredients and make into small balls)
Cornflour slurry –
3 tblsps cornflour
2 tblsps water
(Mix both cornflour and water and prepare a slurry, dip the vegetable balls in this slurry and coat them into dry bread crumbs and fry them in hot oil at medium flame until golden brown)

Ingredients for red sauce –
1 tblsp olive oil
2 tblsps finely chopped onion
1 tsp finely chopped ginger
1 tsp chopped garlic
1 1/2 tsps red chilly flakes
2 cups tomato puree
4 tblsps tomato sauce
1 1/2 tsps oregano
1/2 tsp black pepper powder
1 tsp dried basil leaves (if used fresh then 4-5 leaves)
1 tsp salt (or as per taste)


Method for sauce –
1) Heat oil and add onion, ginger, garlic, chilly flakes and mix them. Sauté it for 1 minute on low flame. Add tomato puree and mix properly. Cook it for 2 minutes. Then add tomato sauce, oregano, black pepper powder, basil leaves, salt and mix. Cook for few seconds. Then switch off the gas.

Ingredients for spaghetti –
2 tblsps butter
1 tblsp olive oil
200 grams boiled spaghetti
1 tsp salt
1/2 tsp black pepper powder
2 tblsps coriander leaves or chopped parsley
1 tsp dried basil leaves

Method –
1) Heat oil and butter, add spaghetti, salt and mix. Add black pepper powder. Toss the spaghetti properly. Add coriander leaves, dried basil leaves and mix well. Switch off the gas.

Serve spaghetti hot with sauce and vegetable balls.
