VEGAN Italian Pasta! Cherry Tomatos, Mushrooms & Capers (VIDEO)

Red wine, tomatos, capers, mushrooms, parsley….mmmm! this pasta is such a simple but Delicious creation! You are going to love it!

Perfect for all occasions, but if you want to impress some friends at a dinner party- this is the recipe for you! You can add pretty much any veggies to it, but the addition of garlic, red wine and capers transforms it into a Italian delight!

RECIPE

Pasta- I used Gf pasta- its vegan and it doesn’t make you feel heavy or gross afterwards.
Red Wine- Use vegan wine
1 Packet Pasta
1/2 C Red Wine
2 Tbs Capers
250g Cherry Tomatos cut in half
250g Mushrooms sliced
Salt + Pepper to season
Vegetable stock
1 Big onion
3-4 Cloves of garlic crushed
Flat leave parsley to serve.
