Corn chowder is a quick and easy first course recipe that can be prepared in less than an hour. A vegetarian recipe made with corn, to garnish as you like: ideal for a healthy and nutritious meal.

INGREDIENTS:

1 cob of white corn
500 g canned precooked yellow corn (drained weight)
half onion finely chopped
1 small potato cut into cubes
1 liter of water
salt
pepper
2 corn tortillas
seed oil

Corn chowder is a first course of Mexican cuisine that is quick and easy to prepare. A comfort food suitable for everyday meals. We made this recipe together with Antonieta Ruiz, a Mexican lady who has been living in Milan for many years and who gave us her version, the one she prepares in her family.

In this recipe we used a mix of pre-cooked sweet yellow corn, the kind you can commonly find in the supermarket, and white corn kernels shelled from a fresh cob. As finding it is not so obvious – it can be found in ethnic stores or in markets which also have international fruits and vegetables – the soup can also be prepared with just yellow corn, in quantities of 600 grams.

The consistency of the soup can be more or less creamy, according to taste. The basic dish is vegetarian, but it can also be enriched with diced bacon and served with tortillas or nachos. In this case, we opted for corn tortillas, cut into strips and pan-fried to become irresistibly crispy.

1. Preparing corn chowder is very simple. First of all brown the onion in a pan with a tablespoon of oil, add the fresh corn kernels and the diced potato. Leave to gain flavor for a few minutes and then add the other corn and cook over low heat for 6/8 minutes stirring occasionally.

2. Add the warm water and cook for 20/25 minutes. Meanwhile, prepare the topping: cut the tortillas into strips and fry them in a pan with a little seed oil until crispy.

3. Once it’s ready, blend the soup with a miniper. Depending on your taste you can make the consistency more or less smooth. Adjust the salt and pepper. Once portioned, garnish with the fried tortilla strips before serving.
