Heat olive oil in a 3-quart stockpot on medium low.
Add garlic and bay leaf.
Add onions, celery and carrots and sauté until onions become translucent.
Stir in spinach.
Add tomatoes and stir.
Add vegetable broth and stir.
Add potatoes, zucchini and peas, mix well.
Add Romano cheese; this will thicken the broth as it simmers.
Lower the heat and simmer until potatoes are soft—about 30–40 minutes.
Remove bay leaf and garlic.
Serve and enjoy!
