How to Make a Caprese Salad || Tomato, Mozzarella and Basil

The calendar may say October, but it’s feeling a lot more like August these days. Soups, breads, and casseroles all sound heavy and just too hot to eat at the moment. So stretch summer out even longer with a cool, light Caprese salad. Best of all it is super easy but looks, sounds, and even tastes super fancy. All you need are a few key ingredients all of which I found at my inexpensive Aldi store. The fresh basil gives it that wonderful refreshing flavor and the balsamic reduction is downright mouth-watering! Don’t forget the salt and pepper which liven up the tomatoes. This can be prepped as an appetizer with individual bites on toothpicks or served as a salad. So long life to you and long live summer!

Ingredients:

Balsamic reduction…
1/2 cup balsamic vinaigrette
1 tablespoon honey
Medium to high heat
Reduce heat when bubbling
Simmer 10 minutes
Let your balsamic reduction cool off

Salad…
1 – 2 Sliced tomatoes
Slice fresh mozzarella
Arrange in a pattern
Pepper
Sea salt
Top with fresh basil
