Italian Omelette Recipe (VIDEO)

This Italian Omelets is quick, easy recipe, traditionally filled with goat cheese and chives. However today we experiment with mozzarella cheese.

INGREDIENTS
• 3 eggs
• 1 a couple tbsp olive oil
• A couple of ounces of mozzarella cheese
• ½ tbsp black pepper
• ½ tbsp. of salt


INSTRUCTIONS
1. In a small bowl, beat 3 eggs together. Add 2 tbsp olive oil into a pan, spread the oil. Heat the pan over a medium heat.
2. Add in 3 beaten eggs. When there are bubbles, use a spatula to lift the cooked parts of the eggs to let the raw eggs go underneath.
3. Keep on medium heat. After cooking for a few minutes until golden brown. turn off the heat.
4. Traditionally, Italian herbs like chives are used to garnish but since it is an indianised version will make do with some cilantro.
5. Add in mozzarella cheese and finely chopped cilantro.
6. Add black pepper. Since we haven’t added the salt, lets add some decent amount of salt.
7. fold the bottom third. then the top third. It is like folding a letter.
8. Transfer the Italian Omelets to a plate, cut in to two and serve omelets warm.
