One Pot Vegetarian Winter Stew (VIDEO)

Welcome to Quick & Easy 101 Recipes! Here it is as promised, our “Full Recipe” from our “Sneak Peek Preview” of this One Pot Vegetarian Winter Stew. It’s so yummy! We slow cooked this Vegetarian Winter Stew in our dutch oven pot allowing it to render all of it’s distinct flavors which in turn created a very savory stew. Oh, if you are a meat eater, you don’t have to worry about this stew being meatless because it has a lot of tender chew. Check out the full recipe and easy to follow step by step instructions. Here’s what you’ve waited for and now it’s here! Come on, let’s start cooking! 😉

INGREDIENTS:

1 tablespoon of organic coconut oil non-dairy butter flavored
32 oz box organic fat free vegetable stock – vegetarian
2 15 oz cans organic basil & oregano diced tomatoes
1 15 oz can organic dark red kidney beans
32 oz jar basil & garlic tomato sauce
3 cloves of garlic (minced)
2 stalks of celery (chopped)
2 cups organic baby leaf spinach
2 cups of bok choy (chopped)
1 cup flat snow peas (frozen)
1 cup green beans (frozen)
1 cup wax beans (frozen)
1 cup red bell pepper (chopped)
1 cup yellow bell pepper (chopped)
1 cup orange bell pepper (chopped)
1 medium yellow onion (chopped)
1 teaspoon of kosher salt, or (salt to taste)
1 teaspoon italian seasoning
1 teaspoon parsley flakes
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon celery seeds
1 teaspoon oregano
1/4 teaspoon curry powder
1/4 teaspoon rosemary
1/4 teaspoon thyme
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika


INSTRUCTIONS:

• Heat oil in a dutch oven or large heavy saucepan over medium heat.
• Add onions, garlic, bell peppers, all dry seasonings, bok choy and
mix.
• Cook covered for about 10 minutes to wilt down the vegetables and
to allow the flavors to mingle. Check in between to mix and add a
little
liquid if necessary to prevent sticking.
• Add diced tomatoes and mix.
• Add green beans and wax beans, give a mix.
• Pour in tomato sauce, mix.
• Pour in vegetable stock and stir.
• Add kidney beans, mix.
• Simmer for 30 minutes.
• Lastly add in spinach and snow peas, mix.
• Turn off the burner, the heat will finish cooking the stew.
*NOTE: This hearty stew can be served over steaming hot
sticky rice or eaten just as is, either way it’s DELICIOUS!!!
You could add potatoes to this stew or turnip roots, etc. Around here
