RECIPE
DAY 137 – Sausage, Peppers, Onion & Potato Bake

Serves 4

Ingredients:

1 lb (500 g) Yukon Gold Potatoes [cut into large chunks]
2 Red Bell Peppers [cut into large chunks]
1 Large Red Onion [cut into large chunks]
*3 Links of Italian Turkey Sausage [cut into 4 pieces per link]
4 Cloves of Garlic [peeled, but left whole]
1 tsp (1.5 g) Dried Rosemary
2 Tbsp (30 g) Olive Oil, plus a little bit more for drizzling the sausage
Salt & Pepper (to taste)

* for the homemade Italian Turkey Sausage meat mixture:

10oz (300 g) minced turkey
½ tsp (3 g) salt
½ tsp (0.5 g) freshly cracked black pepper
½ tsp (1 g) garlic powder
½ tsp (1 g) onion powder
½ tsp (0.4 g) dried basil
¼ tsp (0.2 g) dried parsley
3/8 tsp (1 g) paprica
3/8 tsp (2 g) hot pepper flakes
1/8 tsp (0.3 g) fennel seeds
a pinch brown sugar
a pinch dried oregano
a pinch dried thyme
2 tsp (10 ml) red wine vinegar

1) mix everything and leave overnight in the fridge to marinate.

Process:

1) Preheat your oven to 450 degrees (230 degrees in Celsius).

2) Add all of your ingredients besides the turkey sausage in a large roasting pan, make sure everything is in a single layer. Toss to coat the veggies with the oil and seasoning, pop it into your preheated for about 40 minutes, making sure to toss them around half way through cooking.

3) In a small bowl, toss together your sausage chunks with a little bit of olive oil, scatter the sausage all over the top of the veggies and pop it back into the oven for another 25 minutes or until the sausage is fully cooked through. Serve immediately!
