Soup – How to Make Zuppa Tuscana Recipe (VIDEO)

Another delicious and perfect soup from one of my favorite restaurants. Here is my version of the Zuppa Tuscana. It is easy and simple to make, with not too many ingredients; it is flavorful and nutritious.

Ingredients for 6-8 servings:

4 lbs of Italian sausage (hot or mild) – cut in about ½ inch thick
4 medium russet potatoes (scrubbed clean and sliced in 1/4 inch)
1 large minced onion
4 crushed garlic cloves
4 cups of chopped kale
4 cups chicken broth
6 cups water
2 tablespoons unsalted butter
2 cups half & half or heavy whipping cream
½ cup bacon bits (optional)
1 tablespoon of course salt and black pepper

In HIGH temperature, brown the sausage in the butter. Add the onions, the garlic, and the potatoes. Add the chicken broth and the water and let it boil. Once is boiling, lower the temperature to MEDIUM, cover and let it simmer until the potatoes are tender.

When the potatoes are tender, add the half and half (or heavy whipping cream), the bacon bits, and the kale. Add salt and pepper to your taste. Cover, and let it boil, then is done. Serve with your favorite cheese.
