SUPER HEALTHY CAKE! (Pistachio, Polenta & Olive Oil) (VIDEO)

A mouth-watering Pistachio, Polenta & Olive Oil cake served with a Raspberry sorbet! I also used Xylitol instead of Sugar in the recipe, which contains 40% less calories and is a lower GI carb (i.e. better for you) – so this is relatively very healthy compared to nearly all cakes!

By the way this video is not sponsored! I know it sounds like I’m promoting Xylitol (which is the name of the compound, not a brand name) – I only am because it blew my mind when I discovered it, its basically better than sugar in every way except for it’s slightly steep price!

RECIPE INGREDIENTS:

200g shelled pistachio nuts
50g polenta
50g plain flour
1 tsp baking powder
70ml olive oil
45g butter
3 eggs
200g Xylitol (or caster sugar)
Juice and zest of 1 lemon
Juice of 1 orange
