Tagliolini con il battuto

INGREDIENTS:

300 g of fresh egg noodles
100 g of ham fat or lard
6 cherry tomatoes
2 garlic cloves
marjoram
oil
salt
pepper

DIRECTIONS:

Prepare the chopped mixture. With a knife, finely chop the fat from the ham (or the lard), with the garlic and marjoram. Heat two tablespoons of oil in a saucepan, add the chopped mixture and brown it over very low heat until the ham fat has completely melted. Add the skinned, seeded and chopped tomatoes, salt, cover and cook for a few minutes. Then add about one liter of boiling water and, when it comes to a full boil, add the tagliolini. Stir the noodles by lifting them with the prongs of two forks, bring to cooking, adjust the salt and pepper generously. Transfer the noodles and their broth to a serving dish and serve. You may add a tablespoon of grated cheese, parmesan or pecorino.
