Tortellini (VIDEO)

Ingredients for the dough for 4 people:
400 grams of flour , 4 eggs

Ingredients for the Tortellini filling:
150 grams of minced pork, 100 grams of ham, 100 grams of mortadella, 100 grams of Parmesan cheese, 1 egg, nutmeg.

Preparation:

Start preparing the Tortellini filling: begin to cook the minced pork with a little oil, add a little salt and let it cool down. Cut the ham and the mortadella and after chop them.
When the minched pork is completely cooled add ham, mortadella, Parmesan cheese, egg and nutmeg. Mix well and let it rest.
Now the filling is ready! Let’s prepare the dough.
Put the flour in a bowl and pour the 4 eggs in the center, mix with a fork doing rhythmic circular movements.
Continue doing absorb all the flour, go on with our own hands kneading for at least 10 minutes until the mixture become homogeneous and very smooth, if the dough becomes sticky add more flour.

Now before we begin to pull the dough with your hands, then pull the dough with a rolling pin, continue until you reach a thickness of 1 millimeter for Tortellini, when the dough will be ready, add the flour and let rest for 10 minutes.
Now cut the dough into squares about 3 centimeters per side and put a little bit of filling in the squares.
Now we transform the square into a triangle and close properly, then turn forming a ring. Tortellini are ready!
Now prepare the broth in this case with a nut=Bouillon cube or stock cube, and when it boils cook tortellini for 1-2 minutes, when they begins to float they are ready!
